W**e of the Week 🍾🌊

This week’s pick is unlike almost anything else in the w**e world.

The **eclub CV01 Cava Brut Reserva spends 28 months ageing on its lees, before being submerged 24 metres beneath the Mediterranean Sea off the coast of Alicante for a further 9 months. The result? A sparkling w**e with remarkable finesse, complexity and a story that starts long before the cork is popped.

Expect aromas of ripe peach, white flowers, honey, brioche and delicate pastry, followed by a palate that’s creamy yet fresh, with beautifully integrated acidity, fine persistent bubbles and a long, balanced finish.
