For all you coffee lovers out there. This one you’ve got to try!
Barista starts off as a traditional, washed rind cheese, reminiscent of Abbey style cheeses commonly found throughout the history of Belgian. But a modern twist is applied, with the addition of locally roasted coffee grinds. Grinds are layered between the two halves of the paste, in homage to Morbier, as well as rubbed on the rind. This addition blends harmoniously with the rich, creamy paste, giving off notes of mocha, chocolate, and a juicy acidity. Gourmet Cheese Co.

New in store this week. Raedwald.
Rædwald (pronounced Redwold) is Fen Farm Dairy’s newest seasonal cheese, from the team behind Baron Bigod. In the style of a Reblochon, it offers a gently textured rind and a luxuriously creamy interior, blending Alpine influence with a distinctly Suffolk identity.
Its flavour is both comforting and complex with notes of fresh hazelnuts and smoky bacon mingle with a cool, briny freshness, all resting on a base of earthy woodland tones.
Available only from January to March, Rædwald is made with the farm’s richest afternoon milk from Montbéliarde cows milk too indulgent for Baron Bigod, yet perfectly suited to this creation.
Named for an Anglo-Saxon king, Rædwald is a tribute to Suffolk’s landscape and history, capturing a sense of place in every bite.
