When you work in a supportive environment, sometimes your habits are supported.

Georgia’s “bad habit”? Extra pickles. In sandwiches, burgers, even salads.

At Lightfoot, that love turned legendary. What started as little “Scooby snacks” on shift — bits of cake or bread — soon evolved into gourmet pickle canapés. Georgia says, “ working with supportive people lets both your confidence and your pickle palette reach new levels.” 💚

So next time you bite into The Notorious J.A.C.K, know it’s more than a big, dirty sandwich — it’s a tribute to the joy of working with people who lift you up (and never judge your extra pickles).

Sometimes the walk looks a little different ❤️

Not everyone in the group travels on two feet… and sometimes, even the four-legged crew need a helping hand (or backpack 🐾).

Meet Milo — senior gentleman, professional people watcher, and occasional passenger when the legs get tired.

And if we’re honest, there’s probably something in that for all of us. Sometimes we walk, sometimes we carry, and sometimes we need a little support ourselves.

That’s the lovely thing about our community walks — they’ve never been about pace or performance. Just showing up, getting outside and sharing a little bit of the morning together.

Last week’s forecast said absolutely not. The rain was relentless, the hoods were up, and staying cosy indoors felt like a very reasonable option.

But… these brilliant humans still showed up 🙌

Proof that a little thing like pouring rain isn’t enough to stop good conversation, plenty of laughs and a very soggy wander with lovely people (and a healthy amount of “whose idea was this again?” energy).

There’s something pretty special about how these walks bring people together — rain, shine, or somewhere in between. Sometimes all it takes is a bit of fresh air, a chat, and a reminder that starting the day in good company can make all the difference.

Resilient? Absolutely. Slightly damp? Very. Good humoured? Always. 🌧️💛

A little patch of community magic 🌱

Last Sunday, we joined our wonderful Southwell Road & Central Avenue community gathering — a chance to catch up, share food, reconnect and spend time with neighbours old and new.

But something really lovely also began…

With the help of some incredibly generous people who donated plants, compost and planters, we’ve started creating a little community growing space 🌿 A place where vegetables, fruit and flowers can grow in pots — and hopefully where people can pause, chat and enjoy a moment together too.

It’s still very much a work in progress, and we’d love a little help from our wider community to help it flourish 💚

If anyone has:
🪴 Spare plants, herbs, flowers or veg/fruit plants
🪵 A bench (or somewhere to sit and enjoy the space)
📚 Or something that could be transformed into a little book-share library

—we would love to hear from you.

We are so delighted to be part of this community and want to help it grow, flourish and become a space that continues to bring people together.

This month, every sandwich on the menu has been shaped by a member of our front‑of‑house team, each sharing a food memory that means something to them. And it felt only right to begin with Thérèse, the legend who helped build Lightfoot from the ground up.

“I absolutely love Mexican food. While I was a student in Edinburgh, a close friend from Albuquerque, New Mexico first introduced me to authentic Mexican cuisine, and it completely changed my appreciation of flavour. The chilli, lime and coriander, the rich complexity of mole sauces — such simple ingredients transformed into bold, satisfying and deeply comforting flavours.”

“Later, living in Vancouver and experiencing its incredible food scene only deepened that love.”

“Over the past four years since Nina and I opened Lightfoot, we have been continually inspired by our team, local suppliers, and the environment around us. Their influence has encouraged us to push boundaries, embrace new ideas, and never place limits on what we strive to create and champion.”

The Birria Bandit is our tribute to that journey — bold, comforting, layered with depth, and built on the flavours that first sparked her love for Mexican food.
