We love it when ‘Tim the gardener’ comes into Little Groves. Tim is the gardener at the kitchen garden for The Pony, Chew Valley. The garden here is not your average pub garden! Tims enthusiasm for growing your own is fantastically contagious & he works closely with the head chef Jim Day to provide them with wonderful seasonal fruit, veg & herbs.
Here are their go to choices of herb!
1. Lemon verbena
2. Tarragon
3. Thyme
4. Dill/fennel
5. Nasturtium
Head chef, Jim Day, wrote a tribute to herbs:
“Herbs are just great, they are so versatile in cooking whether it be savoury or sweet.
We have such a great variety at the Pony and we use then daily in so many different ways.
We use them for resting meat in, finishing sauces, making sugars and salts to cure meat or fish, add in to deserts whether that be a thyme sugar or infuse into cream and milk for a custard or icecream.
To even serving the herb salt with fresh raw vegetables from the garden to start your experience for dinner, we also use them to Garnish dishes through the whole menu.”
