RARE COFFEE - INDIA RATNAGIRI
The first of our rare coffees, this carbonic maceration natural has notes of mango, orange and marzipan.
Established in 1920, Ratnagiri is owned and operated by Ashok Patre. This is a 96-hour extended carbonic maceration natural processed coffee from the Hemavathi varietal grown at 4500 feet on our farm in the Sivermara Patte block.
The Brix of the coffee cherries was 25.9 at harvest, and after floater removal, they were placed in Bio fermenters. The coffee was inoculated with a mix of different lab-grown cultures, then fermented for 96 hours under carbon dioxide. Afterward, it was moved to raised beds for slow drying, which took 31 days with constant stirring.
Despite the extended processing, this coffee is surprisingly juicy and clean.
