It’s been a very busy morning for the team after Northern Nic’s Back Kitchen shared a review of our new enrobed items 🤎

The response has honestly been incredible, and orders have been flooding in ever since. The team are working as quickly as possible behind the scenes to get everything made, packed, and sent out whilst keeping the quality where we want it to be.

We just want to say a genuine thank you to Northern Nic for the support, and to everybody who has placed an order and been patient with us whilst we work through them all.

The team have been busy putting together our new summer display ☀️

This time we’ve gone for a full beach scene in the shop, bringing a little bit of summer into Castle Chocolates.

We always enjoy changing the space around with the seasons and creating displays that feel fun, welcoming, and a little different each time. It’s one of those parts of the shop that the team genuinely loves putting together.

As we continue working on new ideas and refining the menu at Castle Chocolates, we wanted to open things up to the people who matter most… you lot.

We’ve been putting our new enrobing machine to work, and this is what the team’s been creating.

Jammy Dodgers - a proper layer of Belgian milk chocolate around a classic, with that satisfying snap as you bite through.

Viennese Whirls - delicate biscuit wrapped in a thick coating, balancing soft and crisp in every bite.

Bourbons - a familiar favourite, finished with a generous layer that gives it a whole new feel.

Custard Creams - smooth, creamy centres with that signature chocolate shell on the outside.

Oreos - fully coated in milk chocolate, giving you that contrast between crunch and a clean snap.

It’s been a big step forward for us as we keep developing what we do at Castle Chocolates, and the team’s been enjoying every part of it! 🤩

Our Turkish delights have always been hand dipped by the team, which meant they weren’t always available as often as we’d like.

As we’ve grown, we’ve been looking for ways to keep that quality whilst making things a little more consistent and this is our latest step forward.

We’re really excited to introduce our new enrobing machine, the newest addition to our production system at Castle Chocolates 🤩.

It’s already making a big difference behind the scenes and includes some very satisfying moments along the way.

A little update from Keith!

We’ve been a bit quieter on here recently due to some staff illness behind the scenes, but we’re happy to say everyone is now back on their feet and things are getting back to normal at Castle Chocolates.

We also wanted to say a genuine thank you to everyone who applied for our chocolatier position. We received over 100 applications, which was an amazing response and not something we take for granted.

It’s been a busy few weeks for us, but we’re looking forward to getting back into the swing of things and sharing more with you all again soon 😃🍫

🍫 Blue cheese and tomato covered in ruby chocolate lolly
🍫 Chicken skin in aerated white chocolate
🍫 Chocolate milk shake with added magnesium and zinc and vitamin B6 to help you sleep at night
🍫 Orange gel and chilli ganache in a dark chocolate shell
🍫 Matcha, collagen with added vitamin D3 & K2 truffles for healthy skin and bones
Today myself and head chocolatier Mike went to the Callebaut 2026 Glasgow conference. We got to try loads of Callebaut's newest creations including their new signature brand chocolate and also some new trends for the coming year listed above.

We’re looking for a chocolatier to join our busy and growing production team here in Carlisle.

If you enjoy working in a hands-on, creative environment and want to be part of a passionate local business, we’d love to hear from you.

The Role:

• Full-time and part-time positions considered.

• Working hours: 9am – 5pm.

• Based in our production space in Carlisle.

What We’re Looking For:

• Experience in a catering or food environment is preferred, but not essential.

• A positive attitude and willingness to learn.

• Someone who enjoys working as part of a team.

What You’ll Get:

• Full training provided.

• Friendly and supportive team environment.

Unfortunately we are going through some strenuous times here at Castle Chocolates. Illness is currently hitting the team hard which is not great given that we are in one of the busiest times of year for us. The staff that are able to work are producing as much as is possible and trying to keep the shelves stocked but there is a chance that orders won't be dispatched as quickly as normal and there could be some spaces in our shelves.
