That’s because we do everything we can to make every single visit as personal (and delicious!) as possible.
Today we hosted two absolutely buzzing Kid’s Choccy Rocky Birthday Experiences—one for an awesome crew of girls, and one for a brilliant group of boys! 🥳✨
Whenever a birthday VIP gives us a theme, we level up and do our absolute best to create fun, custom chocolate creations for them to make.

It's been quite a week at The Chocolate Manor. I so enjoyed two private Truffle Shuffle experiences at the start of the week with and visitors from the US;
Teaching a Chocolate Masterclass for Hospitality & Catering students in Ballymena (wow what a fabulous new building!);
And a team building Chocolate Box experience for the HCA team - this one was lots of fun!
In addition to that the team were busy working on orders for - so it's just been restocked - as well as some corporate clients!
Oh and bookings are open for summer!

Today I welcomed Eileen and Chris from California to Castlerock, for a private Truffle Shuffle experience. When I'm out sharing details of our experiences with the travel trade across the globe, I often say that our guests arrive as strangers, but leave as friends, and today that was most definitely the case.

I never take for granted that our guests have so much choice, so it's an honour that The Chocolate Manor is part of their packed itinerary when visiting the island of Ireland, and it's a privilege to share my joy for chocolate and help them make memories, and indulgent treats!

I'm also so proud to be part of the incredible portfolio of experiences that and showcase.

Eileen shared with me how everyone they've met along their journey so far has been so gracious, welcoming, exceeding their expectations at every opportunity, and how her heart is so full with joy, thanks to our wonderful hospitality and tourism industry. , and aren't marketing slogans - it's truly what visitors experience!

After my visit to and class with this week, it occurred to me that it's been some time since I shared with you, why we only work with . Those of you who've visited us for an experience will see their logo in our workshop, and you'll have heard me recommend it, but so many of you have never been... So here's why!

Finest Belgian Chocolate: Of course, firstly it's all about the TASTE! The couverture chocolate is crafted from 100% Belgian chocolate for an authentic and traditional taste, which we know you all love!

Pure Cocoa Butter: Callebaut is what we call "proper chocolate" because it contains 100% cocoa butter rather than the cheap vegetable fats or hydrogenated oils found in mass-market "compound" alternatives.

Whole-Bean Roasting: Unlike commercial brands that often use pre-processed cocoa mass, Callebaut roasts the whole bean in its shell to protect and develop a deeper, more rounded flavour profile.

Consistent Quality: We know we're working with the very best, every single bag, every single time. That allows us to develop recipes and products that blend our local ingredients with the best chocolate.

Sustainable Sourcing: Last but by no means least it's so important that we use chocolate that supports sustainable cocoa farming through the Foundation, directly benefiting the livelihoods of cocoa farming communities.
