The Pizza Bit Competition arrived in the UK for the first time, and Salvo1968 was pleased to partner.

The first heat was held at Pizza Nerds in Peckham, Davide Parato’s restaurant. Competitors went head to head on dough, flavour, baking and presentation, all judged live.

Heat two followed in York on Tuesday, with one more heat to go, in Brighton on 20 October, before the grand final at the European Pizza Show in November.

Our sales and procurement director Andrea Salvagni spent the week in Naples for . There’s nowhere quite like it.

London took the top spot in the Napoli on the Road category this year, Michele Pascarella’s pizzeria at number one.

Andrea was there as a guest of our partners, , who hosted on either side of the show, from a boat on the Gulf of Naples to a mozzarella bar at Palazzo Caracciolo.

Henry and Cesco found their master Casaro through a shop window in London.

A potential partner in Naples had just fallen through and the brothers had nobody who knew how to make cheese. Then they spotted Nicolo working at Eataly. They knocked on the window, told him their plan on the spot, and asked him to help build something that didn’t exist yet.

He said yes. Three years passed before Fratelli Amodio produced its first ball of mozzarella.

Nicolo is a third generation casaro, and every batch that leaves the caseificio goes through his hands.

Tom’s family has farmed the Widcombe Estate for 27 generations. Three miles from Fratelli Amodio’s caseificio, that’s the same ground his herd grazes today.

Somerset is one of the wettest parts of the UK, which makes for thick, nutrient-rich grass. The Widcombe pastures have never been ploughed and never been sprayed, used only for grazing livestock. That’s about as good as grass gets.

Milk leaves the estate and reaches the coagulation tank within hours of milking, allowing Fratelli Amodio to make and deliver some of the freshest Mozzarella available in the UK.

Fratelli Amodio’s cheese starts on one Somerset farm, a few miles from the Caseificio.

Brothers Henry and Cesco picked it on purpose: Red Tractor certified, organic, pasture-grazed, with a closed herd and feed grown right there in the surrounding fields. Even the waste doesn’t go to landfill, it goes to an on-site anaerobic digester and comes back as low-carbon energy.
