Well here’s 4 Red deer shanks(the toughest cut)cooked in the slow cooker for 12hrs and just falling apart. On sandwich’s with mustard for lunch and now in a steak pie for dinner.

Upgrades.

The way we move forward is reinvesting, this time it’s the first of two new chiller units.

From the moment a shot is fired, that deer then becomes food. The stalkers that shoot for us have all had massive investment in extra training in carcass handling, hygiene certificates, carcass inspection certificates on top of all their own stalking qualifications. We have also recently invested in butchery equipment with more yet to come. For us our chillers were the next step in the plan to become more efficient. The chillers are the first step in getting the maturing process started and the start of that wonderful flavour you all expect from our products.

Recently we’ve received a few comments about the shop. One of them being “oh I’m not buying meat from there” This coming from a man that is willing to buy meat from a butcher at a market stall with no temperature control equipment! Anyway!

When you visit the shop at the farm, yes it’s not much to look at but behind the scenes everything is done by the book and then some!

We are the only fully registered AGHE (Authorised Game Handling Establishment) in Galloway with traceability of any carcass back to a 3metre square area on the Galloway Hills.

Buckin’ Hot Sausages

Cayenne chilli, paprika chilli and serrano chillis are the main culprits for bringing the heat to these bangers. Not one for the faint-hearted, a very tasty venison sausage and is great for anyone who can handle the heat. Hot but not too hot to take away from the venison though!

Beware the afterburn even Maverick would be proud of! 🤣

Available in the shop from Friday morning or reserve now.

Smoked Chilli and Garlic Hunters salami and pepperoni (wild boar and venison)

It’s now in stock. He’s pulled his finger out and made me a good sized batch this time.
All cut into 300g (approx)Bungs.

The last batch lasted two days and received incredible reviews so don’t miss out.

We had some pepperoni sliced into a pasta dish last night and it was amazing.
