Today we will think that we are in France and we are trying the little Blackberry Financiers.
Financiers are small and buttery almond cakes commonly found in French patisserie, usually baked in a small mould.
The financier recipe is made of almond flour, all-purpose flour, egg whites, sugar and butter, are light and moist with a crisp, eggshell-like exterior.
