Packing the June collection today 🌊✨️

Every box is assembled by hand here in Devon - from handwritten labels to little tokens from the coast that inspired this box.

This month’s collection includes:

🌊 Colombia 70% with dulse seaweed
🌿 El Salvador 70% with oregano and seasalt
☀️ 'Beach Memory' bar with coconut, vanilla and sea salt
🌸 'Antibes' dark chocolate mendiants with nibs and Hibiscus salt

It's the final box in my Elements series, and the beginning of the new Slow Taste Society.

I haven't done a lot of markets lately, but how could I say no to this one??

I'm at the wonderful brand new today, on the Sideshore Plaza until 8pm.

In my hometown, looking at the sea I grew up next to. So many memories associated with these views, and this sea air.

My favourite time of year was always summer when the beach was packed with visitors. There's something about people gathering from far and wide to sit by the sea that feels special ✨️🌊

And perfect timing, as my water inspired subscription box ships over the next couple of days. The box includes my seaweed bar with seaweed from this very shore.

Also the musician is playing all of teenage-Nicola’s favourite songs. It's a nostalgia fest 🤪

The final pieces of June's box are coming together nicely ✨️🍫

Dark chocolate mendiants made with sail-shipped Colombian cacao, topped with nibs and Hibiscus sea salt discovered in a market in Antibes.

Alongside seaweed, oregano and seasalt, and a beach inspired coconut and vanilla bar, they complete this season's WATER collection.

Each box comes with a collectible tasting card.

Boxes ship next week. Founding members joining with the June collection will remain on the current pricing for 12 months, while the new 'Slow Taste' membership model takes shape.

I spent the last few days in Nice, Antibes and Monaco and came home feeling inspired, sun-soaked and very grateful for a little time away.

This beautiful gem is in Antibes.

Flavour inspiration is everywhere. I've been really drawn to the array of salts, maybe because June’s subscription box is WATER themed.

When was the last time you thought about your sense of taste?

Taste might be one of the most overlooked senses we have.

Most of us eat while scrolling, working, driving, watching TV or thinking about the next thing on our to-do list.

We consume.

But we rarely taste.

And yet taste has an extraordinary ability to bring us back to the present moment.

A flavour can stop us in our tracks. It can unlock a memory. It can transport us to another place and time.

🍨 A spoonful of ice cream.
🍓 Fresh strawberries.
☕️ The smell of coffee.
🍫 A square of chocolate.

Sometimes the simplest way to slow down is to pay closer attention to what's already there.

What flavour instantly takes you somewhere else?

One of the things I find most fascinating about chocolate is that two makers can start with the same beans and end up with completely different results.

It's one of the reasons chocolate never stops being interesting 🤓 There is always something more to learn, explore, question.

That's why I created my Summer chocolate making Intensive. So I can continue my own learning, and spend the day with similarly curious folks.
