We’re based in Falmouth-Cornwall and we make bean-to-bar dark chocolate using fine aroma cacao beans imported directly from farmers in Ecuador.

Fancy trying an iced chocolate this bank holiday weekend?
Made with real chocolate, cold, creamy, and very easy to prepare. You don’t need any fancy equipment either, just ice, milk, and good chocolate.

If you’ve only had iced chocolate made with powder or syrup before, give this a try. It’s rich, refreshing, and really satisfying.

Chocolate concentrate (makes about 300g, enough for 4 servings at 70g each):

-75g Rio Nuevo 70% drinking chocolate
-225ml hot water

Melt the chocolate.
Slowly mix in the hot water until smooth.
Pour into a bottle and keep in the fridge.

To make one iced chocolate:
-Fill a glass with ice
-Add 180 to 220ml cold milk
-Shake chocolate concentrate and add 70g
-Stir and enjoy

Cold, smooth and made with real chocolate.

When we sat with .yuste.pastry the conversation drifted to how a dessert comes together. We thought he would talk about method or technique, instead he spoke about memory, flavours he has held onto for a long time which slowly become ingredients and texture.

Then he gave a small shrug and said:
