I love rhubarb, but sometimes find it tricky to think of ways to use it apart from stewing it or popping it in a crumble.
But this lemonade is delicious! And super easy….
3/4 cup water
3/4 cup granulated sugar
2 cups chopped rhubarb
2 springs of rosemary
2/3 cup of fresh lemon juice
Add the rhubarb, rosemary, water and sugar to a saucepan and bring to a boil. After about a minute reduce the heat and simmer for 10 mins. Strain the mixture and combine with the lemon juice. Add a few cups of water. Pop in the fridge to chill.
(You can use the strained rhubarb mix as a topping for yogurt so it doesn’t get wasted).
