QUARTZ- the one to watch. Its ground quartz mixed with resin and resin doesn’t like sudden heat. A pan straight off the hob can leave a pale mark that won’t come out. - recommends to use a trivet.
MARBLE- heat isn’t actually marble’s problem. Acid is. Lemon, wine and vinegar will dull the surface long before a pan does. Beautiful stone, just not a low maintenance one. But some people don’t mind that at all!
GRANITE and QUARTZITE- natural stone, no resin anywhere in them. They handle heat well and always have.
PORCELAIN- fired at over 1200°C. Some stone suppliers say pans and pots can be rested straight on their certain range without damage.
DEKTON and (SINTERED STONE) made in furnaces hotter than your hob will ever reach. Both manufacturers say a hot pan can go straight down. If you cook hard and don’t want to think about it, this is your group.
So the answer isn’t yes or no. It’s which one.
That’s why we ask how you cook before we show you anything. Cast iron on a gas hob points one way. A steam oven and a slow cooker points another. Neither is wrong.
