Lazy Potato Salad

Obviously having it on toast, because my body belongs to carbs 😂

4 new potatoes (diced)
2 celery stalks
1/2 large leek
Handful of Frozen Sweetcorn
2tbsp of Vegan Mayo (I used Plant Kitchen mayo)
1tbsp of vegan basil pesto (I used .plantpower)
Salt & black pepper to taste

In salted water, boil the potatoes, leek and sweetcorn.
Drain and allow to cool.
Add celery, mayo, pesto & black pepper.
Serve.
