1. Pick out the right beef—you’re looking for 2 lbs of medium-ground beef to make four burgers.
2. Combine your beef with egg—one whole egg for every 2 lbs of meat.
3. Portion out your patties. We like 7 oz for a standard bun.
4. Shape using a ring mold for an even cook and sear. We use a 4-inch mold.
5. Season generously with salt and pepper.
6. Drop in the water and let Joule do the work!
7. Take your cooked burgers out of the water and let ’em chill out for a few minutes while you pour yourself a pint.
8. Get your pan (or your grill) smoking hot and sear those bad boys. Don’t forget a slice of cheesy goodness.
9. Enjoy!
