One of the most important steps in chocolate making is tempering. It might not look overly exciting, but it’s what gives beautifully made chocolate a clean snap and silky smooth texture.

By carefully heating, cooling and reheating the chocolate to specific temperatures, we encourage the cocoa butter to form stable crystals. It’s a process that requires patience, precision and experience, but it’s what transforms good chocolate into exceptional chocolate.

It took many many trial batches to get our Cinder Toffee (aka Honeycomb) recipe just how we wanted it; big bubbles and thin edges. But we did it and have stuck to that recipe ever since.
