This week, we had our very first **BRCGS Food audit**, and I’m thrilled to share that we came away with **only 3 minor non-conformances** and a **provisional AA grade**! 🙌

Over the last year, my team and I have been working tirelessly to transition from SALSA Food to BRCGS Food, and this result is a testament to the hard work, dedication, and passion we’ve poured into achieving the highest standards of food safety and quality.

While we have to wait 40 days for our official certificate and the chance to use the BRCGS logo, I couldn’t wait to share this milestone with all of you. This achievement means so much for the future growth of our business and demonstrates our unwavering commitment to excellence.

🍨✨ Vanillaicious Homemade Fudge Recipe ✨🍨 Makes approx. 36 pieces.

Indulge in the creamy goodness of homemade vanilla fudge 🎁🍦 Perfect for gifting on any occasion. 🎉✨ Just be warned, it's so delicious, you might want to keep it all for yourself... 😋

🌟 Special Equipment: Sugar thermometer

🚧 Please note: Allergens are listed with an asterisk *

📋 **Ingredients:**

- 450g golden caster sugar
- 400g double cream*
- 50g butter*
- 1 tbsp glucose syrup
- 1 tbsp Bonilla Vanilla Bean Paste

👩‍🍳 **INSTRUCTIONS:**
1. Line a 20 x 20cm cake tin with baking parchment.
2. In a saucepan, combine 450g golden caster sugar, 400g double cream*, 50g butter*, and 1 tbsp glucose syrup. Heat until sugar dissolves and butter melts, stirring occasionally.
3. Insert a sugar thermometer and bring the mixture to a steady boil until it reaches 116°C (soft ball stage).
4. Remove from heat, let it sit undisturbed for 5 mins until the temperature drops to 110°C.
5. Stir in 1 tbsp Bonilla Vanilla Bean Paste and a pinch of salt (optional).
6. Keep the thermometer in the pan and beat the mixture vigorously with a wooden spoon until it cools to about 60°C, creating small sugar crystals for a smooth texture.
7. Pour into the prepared tin before it sets completely. Let it cool at room temperature overnight.
8. 🚫 Don't refrigerate, or it'll become sticky. Cut into bite-sized pieces and wrap up in an airtight container and presentation gift box for someone special 🎁
