One year on Norfolk FWAG go from strength.

We’re incredibly proud to be working alongside Norfolk FWAG as part of the Norfolk Deer Strategy – a truly collaborative initiative bringing together landowners, farmers, deer managers and the local food chain for the benefit of everyone.

At Norfolk Wild Venison, we believe responsible deer management is about far more than population control. It’s about protecting crops and habitats, supporting biodiversity, reducing deer-related road collisions, and ensuring that this incredible natural resource is used to provide healthy, sustainable, locally sourced food.

The Norfolk Deer Strategy is already helping to build stronger partnerships across the county, creating opportunities for ethical deer management while increasing the availability of wild Norfolk venison for local butchers, retailers, schools and households. Which species is your favourite?

UK deer species vary in flavor based on diet, age, and species.

The smaller species (like Muntjac and Chinese Water Deer) offer a milder, sweeter flavor similar to lamb, while larger, woodland species (like Red deer) yield a distinctly darker, earthier, and more metallic meat.
Taste and texture characteristics progress as follows, from mildest to strongest:

The Smaller, Sweeter Species

Muntjac: Often regarded by many as the finest tasting UK venison. The meat is very pale, fine-grained, incredibly tender, and possesses a mild, slightly sweet flavor with almost no gamey or liver-like notes.

Chinese Water Deer (CWD): Renowned in East Anglia for having a high fat content compared to other venison. This makes the meat rich, deeply flavorful, and less prone to drying out. It is frequently described as tasting very similar to lamb.

The Mid-Range & Native Species

Roe Deer: True native deer that browse heavily on a wide variety of plants and flora, meaning the flavor can be heavily influenced by their local habitat. It is medium-textured with an almost sweet profile, though some upland populations can take on a slightly metallic or liver-like taste.

Fallow Deer: A medium-sized species boasting a fine grain and a very palatable, classic venison flavor. Young fallow is considered an excellent, approachable choice for those new to game meat.

The Largest Species

Red Deer: The largest of the UK's deer. It has a much rougher, coarser grain, darker color, and the strongest flavor profile. It is robust, earthy, and sometimes metallic, making it perfect for slow-cooked casseroles or strong wine reductions.

Sika Deer: A smaller cousin of the Red deer, it yields a dark, richly flavored meat that is highly rated among stalkers, particularly from younger does.
