After World Chardonnay Day this week, we thought we’d share a few things about the most misunderstood white wine in the world. The grape people think they don’t like. The grape that makes Chablis. Sauvignon Blanc and anything green is one of the oldest pairing rules in wine (admittedly went slightly off-piste for this, but it worked..!). The grape’s herbal edge meets any herb on the plate, for example, cucumber and mint but it can also work with asparagus, peas, etc.)

The grape’s acidity cuts through the cheese - cheese softens the grape’s bite. Watermelon does the rest as it sweet enough to balance the salt and crisp enough to echo the wine.

Watermelon, cucumber, feta, mint. A cool-climate Elgin Sauvignon Blanc; restrained, mineral, the version that doesn’t shout. A Thursday supper that knows what it’s doing ✔️
