Inspired by .cookland these Broccoli Carrot Muffins for the little one are yum 😋 🥦🥕

To make 4 Broccoli & Carrot Breakfast Muffins you will need:
2 eggs
30 g melted butter
1 cup flour
1 carrot, cooked
1/3 broccoli, cooked
1 cup grated mozarella cheese
Pinch of salt

Method:
1. In a bowl mix eggs and butter, season with salt. Slowly add flour. Mix well until everything well combined.

2. In another bowl mash cooked veggies and mozarella cheese, mix it well.

3. In a large bowl mix flour mixture with veggie mixture. Don't overmix or you will get a chewy muffin.

4. Fill silicone muffin molds with mixture. Fill molds ¾ of the way with the batter. Tip: Don't fill it all the way or your muffins will overflow.

5. Bake at 150°C for 15-20 minutes or until toothpick comes out clean.

6.Allow to cool down. Serve!

These mini muffins are also a big hit for lunchboxes!

Its been through 3 prototypes and a bunch of colour palette and shape changes. Sometimes it takes multiple iterations its all part of the journey it took ayear to get to here. But its a classic kiddie toy every muslim needs 😍
