Created by restauranteur Marina Lai Lentz after her four year old son was diagnosed with coeliac disease, the menu has been born from a deeply personal place, reimagining classic dim sum and Chinese dishes using tapioca flour, rice flour and potato starch, to preserve the flavour, texture and authenticity of the original dishes.
