In the early stages of any business, the desire for positive feedback is overwhelming. You seek affirmation that the year of hard work was worthwhile and that your ideas were valid. Truth is, however, while positive feedback is important, the real value lies in constructive criticism that allows for improvement.

Recently, I received a message from someone expressing disappointment in a Mabel sandwich, which had previously been praised as ‘amazing’ and ‘bloody fantastic.’ It felt like a punch to the gut, but I was immensely grateful they took the time to share their thoughts. I immediately tried the sandwich myself and noticed something was indeed off on that day.

I collaborated with our chef Jamie for a tasting session, and we identified a discrepancy in our process on Mondays compared to other days. This insight not only helped us improve the sandwich but also refined our operations, and it inspired an evolution of our food philosophy, adding ‘generosity’ as a new filter to always view any dish through. Within a day, Jamie had evolved the product into a new, larger, and better sandwich, with a more robust process enabling consistency. A better process and product - for the long term.

Receiving feedback that highlights shortcomings is never easy, but it is invaluable. By the way, this sandwich features bread baked daily in London with only four ingredients and no UPFs. The chicken and ham hock is high-welfare native breeds from North Yorkshire farms. The salad is all British-grown. Now, can you tell me where the ingredients in your lunch came from?

And there we are. Day one! Mabel is up and running and full. Loads of learnings especially in terms of packaging and comms but we are off and running and for the first time money is coming IN to the business. From here we just get better and better.

MABEL IS LIVE! What an effort to bring a consumer brand, a food services business and a tech business to life in less than three months, with £100k investment, a core team of three and some superb off shore support from our dev team. Very proud moment and for me Jason (founder) the realisation of a vision that’s been 14 months in the making. The hard work starts now 😅

Is it? YES it is. Although this week its been moving around bloody big crates then configuring machines and having too little sleep from 4 day round trips to Slovenia. Anyway. We are in the final stretch to launch and its coming together and I am allowing myself an ounce of excitement and pride. Still some work to do to get our app and machine talking nicely tho!

Today’s the day! Finally our first Mabel arrives! That’s obviously an important milestone but so is another one, the day Fruzsi started working with us. Fruzsi heads up all of Mabel’s design and UX and is the third member of the small team that have created and launched a food AND tech business in less than three months. I cannot even begin to put into words how impressive Fruzsi is and how crucial she has been to bringing Mabel to life. I could be but I don’t want to give too much away! Creating a consumer brand from nothing is genuinely my great professional pleasure and the creativity and passion Fruzsi has brought to the project, and the way she has challenged me and broadened my thinking towards to the Mabel brand (trust me when I say that doesn’t happen often) has meant that at MVP we have created a bigger brand than anyone already in the food to go space (outside of the big Americans), a unique identity, a world for Mabel to grow and play within for years AND she has structured a superb consumer app. I am SO proud of the work she has done and hope she will be a part of this journey for years to come. You will see the fruits of her labour in 1 week!
