Avocado Soup! π₯£

No your eyes do not deceive you, this actually is avocado soup. Now you might be thinking - ewww how does that work, but honestly don't knock it till you try it. Avocado Soup can be enjoyed hot or cold (however we prefer it hot) and we recommend some cheesy bread or cheese on toast on the side to really bring out the flavour.
If you'd like to give it a whirl... here's the recipe:
Ingredients:
π₯2 large ripe avocados

1 medium onion
π§ 1 garlic clove - crushed or pureed
π§1/2 teaspoon of salt
π€ pinch of cumin (around 1/4 teaspoon)
π1/4 cup of coriander
π΅1/4 cup of lime juice
β 4 x cups of vegetable stock
Method
1. Chop the onion into small cubes. In a pan, add a couple of drops of oil and then sautΓ© the onions for around 3 minutes. Allow to cool.
2. Grab your blender and scoop the avocado out of the skin and into the blender. Be careful when cutting them in half and removing the stone! Add the onions too.
3. Chop or crush the garlic and add to the mixture - of if it is already pureed, add in two teaspoons or to personal preference.
4. Add in the cumin, coriander and lime juice and the stock. If you have used vegetable stock - you may need the pinch of salt we mention in the list, however if you use chicken stock or bone broth, you may not need to add any more salt.
5. Whizz in the blender for 30 seconds and then try a bit of the mixture for taste. You may need to add more salt or lime here, depending on preference. If you like soup quite thick & lumpy - leave it at this consistency, if you like a thinner soup - blend for another 20 seconds.
6. Spoon into a bowl and enjoy cold, or heat it in the microwave for around 45 secs to 1 minute to enjoy (with your cheesy bread of course!)
