Ingredients (Makes 10 flatbreads)

For the flatbread dough:

400g flour
250ml warm water
2 tsp fast-action yeast
1/2 tsp salt
1 tbsp sugar
60ml Zaytoun Fairtrade olive oil

For the za’atar topping:

120ml Zaytoun Fairtrade olive oil
6 tbsp Zaytoun za’atar

Our new Autumn range has arrived! This season we'll be continuing with our action to support from donations made to our Fair Trade Fund. And remember all profits from Ethical Shop go to support independent, campaigning journalism in the form of the magazine.

As well as shopping with us, you're helping in four ways:

1. Supporting small producer groups who specialise in fairly traded, organic & eco goods
2. Donations from our Fair Trade Fund are currently being directed to Medical Aid for Palestinians
3. Profits from the Ethical Shop are ploughed back into the campaigning work of the New Internationalist
4. We work with partners like the Soil Association, Amnesty, War on Want & Transform Trade to help raise money for them by selling their goods in the shop

AURA QUE is our new Supplier of the Month! Founded by UK designer Laura Queening in 2008, products are developed in collaboration between Laura and small producer groups, mainly from Nepal. AURA QUE work directly with charity and fair trade producer groups using traditional skills and local materials, aiming to create opportunities for the people who make their products. We've just had some beautiful bags, ponchos and socks arrive.
