Date Bark:

Ingredients

* 12 Medjool dates
* 120g cashew butter
* 35g cashews, roughly crushed
* 20g desiccated coconut (optional)
* 150g dark chocolate, melted
* Fresh strawberries, to serve (optional)

1. Line a tray or plate with baking paper.
2. Arrange the dates close together and press them down with the back of a glass until they form one flat layer.
3. Spread the cashew butter evenly over the dates.
4. Sprinkle over the crushed cashews and desiccated coconut, if using.
5. Pour over the melted dark chocolate and spread it out into an even layer.
6. Pop it in the fridge for 1-2 hours, or until the chocolate has set.
7. Break into pieces and enjoy! Serve with fresh strawberries on the side if you fancy.

Tip: A pinch of flaky sea salt on top before chilling makes it even better!
