The Great-Great-Grand Father of Wood Fired Ovens

Founded by Pietro Valoriani in 1890 in the Florentine suburb of Figline Valdano, jars, vases and bricks were produced from refractory ‘Cotto Clay’. Coveted Forni Valoriani refractory clay wood and gas fired ovens (static and mobile) continue to lead the way globally in clay oven design and manufacture. Still very much an artisan producer known all over the world, Forni Valoriani prides itself in creating innovative, well designed, functional and quality ovens to stand the test of time. Pietros’ son, Gino Valoriani, in order to keep up with demand in improving and increasing production, moved the factory to Reggello, a rich, clayish area some 20km from Florence. Less than a century ago, many European communities still relied upon large, communal, wood fired ovens for their cooking needs, often with entire villages using the oven. Each day would begin with baked breads and end with roasts and vegetables being cooked in them. Gino’s son, Silvio, had a Eureka moment – “Why don’t we build our own ovens?” Easier said than done! Silvio went on to design and build the first prefabricated wood fired oven, taking advantage of the secular experience of the family in the choice of raw materials and defining the structural design of the vault, perfect in all its’ proportions. As a manufacturer of bricks, Forni Valoriani was well positioned to help the Italian nation restore and rebuild thousands of new ovens in old and new homes to bake bread during and after World War 2. Sylvio Valoriani was commissioned by the Italian Government to design an oven that could be made and assembled quickly for communities to replace their destroyed ovens. His solution was to produce prefabricated family sized ovens, hand made from refractory clay quarried from the hills of Tuscany. The newly designed ovens were far more fuel efficient, had great heat retention and were easily and quickly assembled. Sylvio Valoriani patented his unique design in 1945 and, is still to this day, recognised as the original Italian wood fired oven. During the 1960’s, Valoriani again adapted to the trend at the time as Italian eating habits were changing, this was mainly down to greater disposable income which allowed people to eat out more frequently. The Valoriani response was to create a range of prefabricated wood fired ovens called Vesuvio made exclusively for professional use. In response to great demand at home and abroad, Forni Valoriani set up its’ own commercial and distribution network. Today, Valoriani ovens are still hand crafted in Refrattari Reggello, high in the hills of Tuscany. Valoriani prides itself on not compromising quality for price, but by manufacturing ovens with proven longevity, being in daily use after 30 years. Key reasons for the longevity of Valoriani ovens are the manufacturing process and the use of refractory clay for both the vault and oven floors. Forni Valoriani developed ‘The Verace’, the first gas fired pizza oven, globally accredited by Associazione Verace Pizza Napoletana [AVPN] to enable the creation of an authentic Neapolitan pizza. Valoriani tested and ruled out ‘Micro-Mesh’ technology as they found the clay disintegrated far faster than cement only ovens and often released unsafe particles into the oven chamber and food. All Valoriani ovens are manufactured from refractory clay only and tested to be 100% food safe and carbon neutral when used in accordance with the manufacturer’s instructions. Forni Valoriani are quite pragmatic about competitors attempting to copy their products and take it as a compliment, knowing full well that their ovens have been the catalyst and therefore responsible for the emergence of many competitors who do not have the lineage, heritage or expertise to manufacture to their standard. Now in the hands of the 4th and 5th generation, the success of Forni Valoriani has been down to each generation adapting to current trends and customer needs. Today, Forni Valoriani is headed up by Pietro’s’ great grandson, Massimo and great-great-grand daughter, Viola who looks after export markets across all continents.

The start of the Real Bread Campaign's is appropriate for the next part of our story of the Valoriani family brand and its ovens.

We are now in the factory of today in Reggello, where the component parts of a woodfired, or pizza oven if you prefer, are manufactured in-house. Unlike other manufacturers, Valoriani produces both domes and floors under the expert artisan eyes of its operatives. Quality control is everything.

Furthermore, such is the manufacturing skill that they can produce a different floor, with a different composition for those who wish to bake bread - sourdough or otherwise. Artisan woodfired oven manufacturers truly deliver for artisan bread makers.

This is yet another way in which Valoriani stands apart. It speaks of expertise, specialisation and dedication to the art of woodburning oven manufacturer.

We continue our Valoriani pizza oven story today with some pictures of the factory in Reggello in the years after Silvio Valoriani had created the world's first pre-fabricated pizza oven.

The artisans working in the Valoriani factory brought something equally important to the story: practical knowledge of refractory materials, an understanding of clay, an eye for quality and skills honed through years of working with materials required to perform under extreme heat.

This wasn't mass production without a soul. It was innovation built upon craftsmanship.

Hands shaped components. Eyes judged materials. Experience informed decisions. Knowledge passed from one person to another.

And today, this is still the case.

It's easy to look at your pizza oven and see only the finished product.
What you don't see are the decades of experimentation, innovation and accumulated knowledge behind it – or the generations of craftspeople who helped perfect what came next.

Today it's a spot the difference challenge as we highlight the next step in the history of our oven manufacturer, Valoriani's, history.

In 1948, this picture was taken. In the foreground, you will see pizza oven components. By this point in history, Valoriani was dispatching the component parts of ovens to locations across Italy, to support the post World War II recovery programme.

A means of constructing an oven from component parts had been cleverly created by Silvio Valoriani. It was a step towards what came next - the simplification of the whole process by creating the world's first pre-fabricated oven.

Silvio channelled the family’s centuries-old experience in selecting and handling best-in-class raw materials and designed a self-supporting, segmented vault. He then managed to increase the stability of the design. With this advance, the first pre-fabricated refractory oven in the world came into being.

This is the basis of the wood-fired ovens from Valoriani that we know today and what every other manufacturer has tried to copy, with little success.

If you have a wood-fired oven from Valoriani, its story lies in the genius and problem-solving ability of Silvio Valoriani. The stakes were high. People need to be fed. Thankfully, his knowledge won through and created an oven that has never been surpassed.

Yesterday, we showed you an early refractory clay brick from Valoriani. Today, we're highlighting how much the knowledge acquired by the Valoriani family was required in post-war Italy.

This atmospheric photograph takes us back to the Valoriani family manufacturing base in 1944. They had moved their factory to Reggello, close to a supply of superb refractory clay.

At a time when Italy faced the enormous task of rebuilding communities devastated by war, the skills of the Valoriani family had a very practical role to play.

The family had generations of experience in working with clay and refractory materials; materials capable of withstanding and retaining intense heat.

That expertise counted.

Valoriani provided high-quality clay bricks, as part of the official post-war recovery programme. These were used to build thousands of wood-burning ovens, helping families to bake bread as a staple of their post-war diet, as villages and communities began the long process of rebuilding their lives. Valoriani ovens were literally helping to feed Italy.

An oven wasn't a lifestyle purchase then.

It wasn't an outdoor kitchen accessory, as it is today.

It was part of putting everyday life back together.

Heat. Food. Bread. Family. Community. A vital quintet.

Behind this lay the specialist knowledge of both materials and manufacturing that the Valoriani family had acquired.

The photograph is a reminder that genuine manufacturing heritage isn't simply about being able to put an old date on a company timeline.

It's about knowledge accumulated through generations and what that knowledge has facilitated and created.

There is a direct line between this story and the Valoriani pizza ovens of today: an understanding of refractory materials, heat and oven construction, handed from one generation to the next.

So perhaps there's another question worth asking when choosing a pizza oven:

What can one old brick tell you about a pizza oven?

Quite a lot, actually.

This brick dates back to 1890. It carries the name of the founder of the now renowned pizza oven brand, Valoriani - Pietro Valoriani - his family business and details of the family's base at that time, in Figline Valdarno.

That makes it a tangible piece of a story stretching back 136 years – a story of Italian craftsmanship, specialist knowledge and generations of a family learning how to work with refractory materials and fire.

Today, that family name appears on Valoriani pizza ovens used by pizzaioli, restaurants and passionate home cooks around the world.

So here’s a question worth asking:

What’s the history behind your pizza oven?

Who understood the materials that went into it and how they react with extreme heat?

How many years of knowledge sit behind its construction?

And will the people who made it still be making ovens for the next generation, as the Valoriani family are?

Heritage isn’t just a nice story to tell.

When you’ve spent more than a century understanding refractory materials inside-out, whilst mastering heat retention, heat distribution and oven construction, that knowledge becomes part of the product.

Techniques evolve. Designs improve. Technology moves forward.

But the knowledge doesn’t start again from zero.

It gets passed down.

This is the factory in Reggello, tucked away in the stunning Tuscan hills.

Importantly, also besides a quarry with exceptional raw material for the creation of refractory clay products. Like the wood-fired (pizza) ovens that are produced here.

You can't make a silk purse from a sow's ear, as they say. The artisans at Valoriani don't. They start with the finest 'ingredients' for their ovens and build on that.

This is why these ovens are head and shoulders above others. Why they are still operating perfectly after 20 years of use.
