π§ Exciting times at the Westcombe Cheese Dairy! Last week we had the pleasure of hosting a very special cheese making occasion. We had the top cheddar makers from the traditional sector for an incredible experimental make. Using a centuries-old recipe from the 18th and 17th centuries, we held the milk overnight to observe how the acidity would develop. We also took a deep dive into understanding the various methods of cheddaring. We used a traditional curd breaker and had a demonstration of how the hot Iron technique was used to measure acidity before ph or TA meters were around. We only have to wait a year or two to see what these mysterious cheeses will taste like!!
