This weather might be perfect for the beach, but it’s far from ideal for making artisan chocolate. Until temperatures drop, we can’t produce chocolate to the standard you expect.

This is the first of many chocolate recipes I’ll be sharing.

Over the coming weeks, I’ll be showing you easy dessert ideas using some of the best chocolates, paired with ingredients and flavours that help them shine.

First up: wine-poached pears with a silky chocolate sauce made using our 70% Colombian dark chocolate.

The rich cocoa notes, subtle fruit flavours and smooth finish of the chocolate work beautifully with the red wine syrup, creating a dessert that’s simple, elegant and surprisingly easy to make.
