It’s wrapped in aromatic ramson leaves which pop up in the Cornish woodlands in spring. They give the cheese a gentle garlicky flavour and a slightly firmer texture.

Brin D’Amour | A semi-soft sheep’s milk cheese from Corsica. It’s supple and aromatic, covered in herbs from the Corsican Scrubland. It’s probably the most expensive cheese we’ve had on the counter but for a taste which transports you to sunnier and warmer climes we think it’s worth it 🌞 🧀
