Ingredients:
For the Crust:
2 cups graham cracker crumbs
½ cup melted butter
For the Cheesecake Filling:
4 packages (8oz each) cream cheese, softened
½ cup granulated sugar
1 teaspoon vanilla extract
4 large eggs
1 cup sour cream
½ cup heavy cream
¼ cup caramel sauce
¼ cup chocolate sauce
¼ cup strong brewed coffee, cooled
For the Garnish:
Whipped cream
Caramel pieces and crumbs
M&M's candies
Instructions:
Preheat oven to 350°F (175°C). Grease a 9-inch springform pan.
Make the Crust: In a medium bowl, combine the graham cracker crumbs and melted butter. Press the mixture firmly into the bottom of the prepared pan. Bake for 10 minutes. Let cool completely.
Make the Cheesecake Filling: In a large bowl, beat the softened cream cheese and sugar until light and creamy. Beat in the vanilla extract.
One at a time, add the eggs and beat well after each addition.
In a separate bowl, whisk together the sour cream, heavy cream, caramel sauce, chocolate sauce, and cooled coffee.
Gradually add the wet ingredients to the cream cheese mixture, beating until just combined. Be careful not to overmix.
Pour the filling over the cooled crust.
Bake for 60-70 minutes, or until the center is slightly jiggly.
Turn off the oven and let the cheesecake cool completely in the oven with the door cracked open. This helps prevent cracks.
Once cool, refrigerate the cheesecake for at least 4 hours, or overnight, until set.
To Serve: Before serving, decorate the cheesecake with whipped cream, caramel pieces and crumbs, and a sprinkle of colorful M&M's candies!
Tips:
For a stronger coffee flavor, you can increase the amount of coffee to ⅓ cup.
You can use different flavored M&M's to match your preference or for a festive occasion.
Leftover cheesecake can be stored in the refrigerator for up to 5 days.
