🧑‍🍳Last week, we held a cookery class at CUHK again! This time we introduced three South Asian dishes: bara, chatamari, and gulab jamun. Bara is called Nepali pancake, whereas chatamari is called Nepali Pizza. In our common understanding, pancake and pizza should be made of wheat flour. But in the Nepali version, the former is made of black lentils, and the latter is made of rice flour. Both dishes are the traditional dishes of the Newari people, the historical inhabitants of the Kathmandu Valley. Gulab jamun is like sweet dumplings in Chinese culture (tangyuan), a dessert from Indian culture. But unlike tangyuan, it is not made of glutinous rice but powdered milk. These dishes were easy to cook. Students could finish cooking these dishes in 45 minutes. And what impressed the students the most is that pancakes, pizza, and sweet dumplings can be made of ingredients that are different from what they used to know!🧑‍🍳
🧑‍🍳上星期,我們有機會在中大進行烹飪班,今次我們介紹三個菜式,分別是巴拿、察達馬利、及炸奶球玫瑰露。巴拿又叫尼泊爾班戟,而察達馬利又叫尼泊爾薄餅,就我們平常所知,班戟及薄餅應是麵粉做,但在尼泊爾版本,前者是用黑色小扁豆做,而後者則是用米粉做,兩個菜式都是加德滿都原住民「尼華爾人」的傳統菜式。炸奶球玫瑰露就像中國文化的湯圓,是一道甜品,但跟湯圓不同,炸奶球不是由糯米做,而是用奶粉做。這些菜式也很容易預備,同學們用45分鐘,已把菜式煮好。對同學們來說,最深刻的就是發現班戟、薄餅和湯圓可以用一些不同於日常慣用的材料去做呢!🧑‍🍳

CUHK Cookery Class🧑‍🍳
Thanks to Wyman’s invitation, we have got a chance to conduct a cookery class with a group of CUHK students on 18th April. This time we cooked two homemade Nepali dishes – chicken curry and chayote vegetable (Nepali: iskus tarkari). The cooking process was not too difficult. When our participants tried the food, they could quickly tell the differences between the homemade one and the one that they usually ate at the restaurant – the curry was less oily and creamy, and the chayote was fresh and tasty! In short, the food tastes healthy! Indeed, homemade food is always tasty, healthy, and more importantly, less costly!

謝謝Wyman的邀請,我們有機會於4月18日去到中大跟一班同學一起煮食,今次我們煮兩道尼泊爾家常菜,包括咖喱雞及合掌瓜咖喱,烹飪過程不太複雜,當參加者品嚐這些菜式時,他們很快便能說到這兩道家常菜跟平常餐廳吃到的菜式的分別 –– 咖喱雞不太油膩、奶油味較輕,至於合掌瓜則感覺較為新鮮及美味,簡單來說,就是感覺健康一點。沒錯,家常菜通常都是較為美味、健康,而更重要的,就是價錢較為便宜呢!

It finally comes to the last lesson of our exchange cooking workshop with the delightful mothers. In the last lesson, Taste Buddies were so excited to have a hands-on opportunity to cook yummy chicken biryani and mouth-watering dessert, rashmalai. But some of us were new to kitchen and thought it’s fine to wear gloves when preparing dough for rashmalai. In the end, the flour just sticked over the fingers. But later we have learned to apply oil to our bare hands when making dough, which is way much easier than using gloves.

我們與愉快的媽媽們合作的烹飪交流班來到最後一課了!於最後一課,Taste Buddies有機會親手預備美味的雞肉香飯,以及令人垂涎三尺的拉斯瑪萊甜品,大家也感覺很興奮,但我們有部份人是初人廚房,有些成員以為可帶著手套預備拉斯瑪萊的麵團,結果麵粉也沾到手套上呢!後來,我們也學懂了可以在製作麵團前先在手上塗點油,這絕對容易過帶著手套做麵團呢!

Finally, it came to the second last lesson of Taste Buddies cooking workshop in YMCA, Tin Ching. On week 5, the skilled mothers taught us how to prepare the pleasant dish of royalty and different cooking of bread. Mughlai chicken curry served with naan bread had a delicious taste with varieties of species and bread halwa had a spongy texture which tastes like bread dipped in masala tea.😋

Taste Buddies於YMCA天晴會所所舉辦的烹飪交流班終於來到最後第二課!於這第五星期,廚藝精湛的媽媽們教導我們如何煮美味的皇室菜式以及不同麵包煮法,皇室咖喔雞配上薄餅,以及不同香料,美味非常,至於哈華麵包,有著海綿般的口感,就像沾著瑪撒拉茶來吃的麵包一樣!😋

On Week 4, we decided to swap our roles: Taste Buddies have turned to be students🧑‍🎓 to learn to make some new dishes from our former students, who are all mothers with rich cooking experience!🤗 All of us have got the hands-on opportunities to make the new dishes, which are kheer (rice pudding) and resha kebab (shredded kebab). It was yummy, yummy!!!😋
來到第四星期,我們決定角色大反轉,Taste Buddies轉為學生🧑‍🎓,跟我們之前的學生,亦即煮食經驗非常豐富的媽媽們,學習新菜式!🤗今次我們學習煮牛奶米布丁,以及烤肉餅,大家也有機會落手下廚,煮出來的味道也不錯呢!😋

😋Taste Buddies have successfully completed the first half of the exchange cooking class🥙. From this week onwards, Taste Buddies will be the students, and our pervious students will become the chefs, who will guide us in cooking some interesting dishes. EXCITED!!!🤗

In Week 2, Taste Buddies taught two dishes from Sri Lanka and South India; they are kottu roti and kesari respectively. The students found kottu roti a unique dish because of the chop-chop method; and a similar dish can be found in Pakistan called kata-kat which uses internal organs of animals. For kesari, it was not a new dish but a new name for them. In Pakistan, kesari is called haluwa.😋😋

第二星期Taste Buddies教了兩道來自斯里蘭片及南印度的菜式,它們分別是kottu roti及kesari。學生們覺得kottu roti是一道是特別的菜式,尤其它那種不斷剁碎的煮法,而巴基斯坦也有一道差不多的菜式,叫作kata-kat,但材料主要是用動物內臟,至於kesari,菜名是新的,但菜式卻是她們所熟悉的,在巴基斯坦,kesari叫作haluwa。😋😋

☺️Taste Buddies had launched a cooking🍲 workshop at YMCA Tin Ching in Tin Shui Wai. In the first week, our students have learned how to cook Jollof rice and banana roti. It was a different experience for them as both dishes were new to them. But the dishes that they made were more deliciou than those made by Taste Buddies.😋😋

☺️Taste Buddies在天水圍天晴開展了一個烹飪班,第一星期,我們的學生學煮加羅夫飯及香蕉煎餅,兩道菜對學生們來說也是新菜式,給她們一個嶄新的體驗,縱然如此,她們煮出來的菜式比Taste Buddies所煮的還要好味!😋😋
