Healthy Diet — Turning Information into Action

Recently, I read a National Geographic article about the “planetary health diet.” Scientists suggest this way of eating can nurture both human health and the planet, and it is far more achievable than we think. The core philosophy is not about extreme restriction, but pursuing a balanced lifestyle: embracing more whole grains, vegetables, beans, nuts, fruits, and plant-based meals; reducing red meat; and enjoying simple, home-prepared foods.
My very first step is simple:
Whole-grain toast with natural peanut butter, served with fresh carrot sticks.
Nothing fancy. No complicated recipes. Just an easy-to-prepare, sustainable step forward. When choosing bread, I look closely at the ingredients to ensure the first item listed is truly "whole grain" or "whole wheat," rather than just "brown bread." For the carrots, I enjoy them raw—their crispness brings a refreshing touch to the morning.
I have also embraced another simple ritual: a Red Delicious apple a day. After washing it thoroughly, I use a corer to cut it into eight pieces and enjoy it with a small amount of natural peanut butter. Apples are an excellent source of soluble fiber, which naturally supports healthy cholesterol levels. I prefer keeping the skin on, as that is where many of the beneficial fibers and phytonutrients reside.
Here are a few simple meal ideas I invite you to explore in your daily routine:
Whole-Grain Toast with Peanut Butter and Carrot: Toast a slice of true whole-wheat bread, spread natural peanut butter, and serve with raw carrot sticks or top with grated carrots for a crunchy texture.
Red Delicious Apple with Peanut Butter: Wash a Red Delicious apple, keep the skin on, slice it into eight pieces, and enjoy with a touch of natural peanut butter.
Oatmeal with Nuts, Berries, and Seeds: Cook a warm bowl of rolled oats. Top with fresh berries, walnuts or almonds, chia or flax seeds, and a splash of plain yogurt or unsweetened milk.
Brown Rice Tofu Vegetable Bowl: Create a nourishing base of brown rice, then add tofu, spinach or kale, mushrooms, carrots, and edamame. Drizzle with a light soy-ginger or lemon-tahini sauce.
Whole-Grain Pasta with Greens and Beans: Toss whole-grain pasta with fresh spinach, broccoli, or zucchini. Add white beans or chickpeas for a clean source of protein.
Lentil Vegetable Soup: Simmer lentils with onions, carrots, celery, tomatoes, and garlic. Serve this comforting soup with a slice of whole-grain bread.
Baked Sweet Potato with Chickpeas: Bake a sweet potato until tender, top with seasoned chickpeas and fresh greens, and finish with a dollop of plain yogurt or tahini.
Good health does not always require a dramatic lifestyle overhaul. More often, it begins with a better slice of bread, a single carrot, a fresh apple, a warm bowl of soup, and a daily, conscious choice to care for the body God has entrusted to us.

Editorial Note: If you have an allergy to peanuts or tree nuts, the natural peanut butter in these recipes can easily be swapped for other natural butter to suit your health needs safely.

The Soil Beneath Our Feet, The Soul Within Our Hearts: What Are We Growing?

We often wash soil off our shoes and hands without a second thought, yet soil is the very canvas from which our bodies are crafted. Let us pause to explore this humble dust, and reflect on what unfolds when our physical journey ends. Do you still recall the poignant words whispered at gravesides? “Earth to earth, ashes to ashes, dust to dust.” It stands as a gentle reminder that our earthly bodies will return to the ground—yet life itself does not originate from the soil. Where, then, does the spark of life come from?

The Bible reveals just how deeply we are tethered to the ground: “The Lord God formed the man from the dust of the ground…” But the narrative does not end in the dust. It beautifully continues: “…and breathed into his nostrils the breath of life” (Genesis 2:7). Without God’s breath, Adam was merely an inanimate sculpture of clay. It was only through the Divine breath that he became a living, breathing soul.

This truth grounds us in deep humility. Our physical frames are borrowed from the earth, and to the earth they shall return. But while we are here, our bodies rely on a constant whisper of air—a gift gracefully and freely woven into the fabric of God’s creation.

On the third day of creation, God commanded dry land to appear from the waters, and vibrant greenery burst forth from the soil. Soil holds the roots, stores essential nutrients, catches the falling rain, and cradles new growth. Trees and vast oceans work in harmony to refresh the very air we breathe. This is all part of God’s magnificent design, thoughtfully prepared to sustain the living creatures He was about to bring forth.

Air costs us nothing, yet it is by no means cheap. Without it, existence ceases in an instant. We inhale and exhale every single moment, yet we rarely pause to give thanks for this invisible, life-sustaining gift.

In much the same way, our hearts mirror the soil. What we allow to take root in our inner being, and the environment we cultivate around it, entirely shapes what will grow there.

Jesus beautifully illustrated this in the parable of the sower, speaking of different conditions of the soil. The seed was perfect, but the soil decided its fate. A hardened heart defects God’s Word. A shallow heart gives up when tested. A crowded heart is choked by life's anxieties and desires. But a good and fertile heart receives the Word, allows it to take deep root, and bears abundant fruit.

So the defining question is not merely, “What is under my feet?” but rather, “What is growing in my heart?” A heart aligned with God catches His still, small voice and turns to Him in prayer. A heart out of tune, however, easily picks up alternative signals—temptation, pride, fear, resentment, and toxic thoughts.

We live because God continues to grant us breath. We flourish because He designed trees, oceans, soil, rain, and air to keep us alive. Every single breath is a pure grace, and every grace deserves a song of gratitude.

May our hearts become good, fertile soil for God’s Word, blessed with clean spiritual air, rivers of living water, and His guiding light to help the seed grow and bring forth a beautiful harvest.

人生常常把兩顆「豆」(Pea)放在同一個豆莢裡:Problem(問題)與 Purpose(目的) 。

Life often places two “peas” (P) in the same pod: Problem and Purpose. The problem may be real — pressure, setback, uncertainty, conflict, or loss. But purpose asks a better question:

Not only, “Why is this happening to me?” But, “What good can still come through me?” The Apostle Paul offered a powerful example. Even while facing imprisonment and uncertainty, he stayed focused on serving others and helping them grow in faith, courage, progress, and joy. We may not always choose our circumstances. We cannot command fortune to come our way. But we can choose our response. We can prepare our heart, sharpen our skills, and raise the sail when opportunity’s wind begins to blow. What some call “luck” may also be the meeting point of readiness, courage, timing, and grace. Problem can turn us inward.

Purpose can move us outward — to serve, encourage, forgive, rebuild, and bless.

When Problem and Purpose sit together like two peas in a pod, choose the pea that grows life. "If by continuing to live I can do more worthwhile work… I will stay on with you all, to add to your progress and joy in the faith." — Philippians 1:22–25

Fortune
Luck

Catching the Winds of Luck

I recently came across a thought-provoking insight from Tina Seelig, shared by Stanford University. She draws a helpful distinction:
Fortune is what happens to you; Luck is what you help create.

We often view luck as a random encounter, but Seelig uses the metaphor of wind: opportunities are like the wind—ever-present and powerful, yet invisible. To catch them, we need a sail. But before the sail, we need a "ship"—the internal work of building character and sharpening skills.

Next, we need a "crew." Luck seldom sails solo; most doors open through the connections of mentors, friends, and collaborators. Once prepared, we must "hoist the sail"—taking action at the right moment and remaining attentive to the changing conditions.

However, I believe one more tool is essential: the Compass.
No matter how strong the ship or how faithful the crew, without a compass, movement becomes drifting. This represents our "calling" and "purpose"—the wisdom to discern which winds are worth following among many opportunities.

This echoes a deeper spiritual truth. We cannot command the wind, as Scripture says: "The wind blows wherever it pleases. You hear its sound, but you cannot tell where it comes from or where it is going." (John 3:8)

We cannot control our circumstances, but we can choose to be faithful stewards: preparing the vessel, gathering the right companions, and calibrating our compass. When God’s wind begins to blow, we will be ready to set sail.

大地天空之下,萬物都靠主手養;
若因缺乏近人前,溫柔呼喚解驚惶;

Spring’s Gentle Welcome: Nature’s Best Friends

Spring has arrived, and the air is filled once more with the chorus of birds. The birdbath is ready, freshly filled by the recent thunderstorms and April showers. It’s also time for me to hang the suet and bird feeders again. The start of a new season brings the joy of welcoming these little visitors, whose presence breathes life into the backyard.

Facebook reminded me that seven years ago, I took close-up photos of a female Red Fox enjoying a nap on a stack of warm cedar mulch on my sundeck. Even now, those images bring a smile to my face. Of all the places she could have chosen, she chose to rest there, peacefully and without fear.

Over the years, I have come to treasure these backyard encounters as gifts from God's creation. From the Red Fox who made herself at home, to the chipmunks and Black-capped Chickadees that eat from my palm, and even the Eastern Cottontail that now hops toward me for treats—each is a cherished friend.

Spring’s Gentle Welcome: Nature’s Best Friends

It’s also time for me to hang the suet and bird feeders again. The start of a new season brings the joy of welcoming these little visitors, whose presence breathes life into the backyard.

I often sprinkle bread crumbs on the deck, whistling and calling out "食嘢啦" ("Eating time"). Even in the rain, the squirrels and bunnies appear to share this little feast in peace. This harmony doesn't come from luring or trapping, but through stillness and patience.

Under the vast sky and upon the earth, all creatures are sustained by the Lord’s hand. Whether they fly, run, or leap, each has a home and its daily bread. If they draw near in need, let a gentle call calm their fears; for if you truly love nature, nature will surely draw near to you.

"The eyes of all look to you, and you give them their food at the proper time." — Psalm 145:15

Artemis, Apollo… and stamp albums in the basement

Recently, NASA’s Artemis II and Orion successfully paved a new path back to the Moon. Watching humans journey behind the Moon once again sparked a connection to my most old-fashioned hobby: stamp collecting.

As a kid in Hong Kong, my dad bought me USSR space stamps—tiny paper windows into a much bigger universe. My mom, however, collected stamps from real life, saving them from envelopes that arrived at Rock House Publishers from all over the world. It was a quiet record of an era when ministry and connection traveled by paper and postage.

Apollo 11 landed humans on the Moon, and decades later, Artemis II is pushing boundaries with new technology and new goals. It’s fascinating how the most modern moon program leads me back to something as old as stamps. Both are driven by the same human impulse: to reach beyond what we can see and to preserve the story.

As I flip through those stamps again, I’m grateful. God has a way of connecting generations through small things, reminding us to look up and give Him the glory.

"Lift up your eyes and look to the heavens: Who created all these?" (Isaiah 40:26)
