A little soursop and nutmeg experimenting at MayaJayde today!

Soursop peel, carefully dried and ground for tea. It has a lovely nutty flavour and is probably my favourite tea so far.

The soursop seeds are also drying. Anyone need some for planting? They are for growing only — not for eating.

Then there’s my vodka and soursop smoothie, served in my favourite twisted glass that hasn’t been occupied in years. Clearly it was waiting for the right drink!

And finally, the mace from the nutmeg fruit is fully dried and ready. Mace is the beautiful lacy covering around the nutmeg seed. It has a warm, slightly sweeter and more delicate flavour than nutmeg and can be used in baking, sauces, soups, spice blends and even drinks.

Now I just need to decide what to make with it first! Never used it before.

Meet the orchid bee and the orchid with a loaded catapult!

This large black-and-orange visitor is most likely a belted orchid bee — Eulaema cingulata. The unusual flower is a Catasetum orchid, probably Catasetum integerrimum.

Male orchid bees visit these flowers to collect perfume. But the orchid has its own plan. When the bee touches a tiny trigger inside the flower, the orchid fires a sticky pollen package onto its head.

That is the yellow-and-brown piece that looks like a little flower growing out of him.

The bee then flies to another Catasetum orchid, carrying the pollen with him and helping the orchid reproduce

Huge soursop! One fruit gave us all those seeds — and a mountain of creamy flesh, or what we call chewing sweet gum.

Soursop is naturally rich in vitamin C, fibre and potassium. It has also attracted scientific interest, although it has not been proven to prevent or treat cancer in people. Still, many people swear by it.

I bagged and froze most of the fruit, blended half to drink fresh today, and I’m also going to dry some leaves because people have been requesting them. How do you all prepare yours?? Ice cream???

A few nutmegs picked just in time! Nutmeg grows inside a fruit, with the beautiful red mace wrapped around the seed—two spices from one fruit.

Our coffee is being roasted, and the turmeric, chillies, herbs and spices are all growing here too. From the soil to the cup and kitchen—everything starts right here.

Ten days away and I came home to healthy plants thriving around the pool — Thai chilli, turmeric, thyme, lemongrass, cashew, rosemary, ginger and chipilín.

Even the newly transplanted peanut grass and lipstick plants are doing beautifully. Amazing what these late rains can do — everything has suddenly come alive. MayaJayde’s little jungle is looking very happy!

This is an Arsenura armida, also called the Giant Silk Moth. They’re native here in Honduras.
Facts that surprised me:

It has no mouth. Adults do not eat at all. They live for about one week using energy stored from when they were a caterpillar. Their only purpose is to mate.

Wingspan can reach 18cm. This one was bigger than my hand.

The wavy black and white edge along its wings is camouflage. It helps the moth look like a dried leaf to avoid predators.

The cream and chocolate brown pattern with scalloped edges is natural.

This one tripping! Already in the dustpan. Freedom tonight.

Welches garden copan ruinas

From cacao flowers growing straight from the trunk to lilies bursting from hidden bulbs, this garden is doing the most.

Tiny flowers, big drama. Air plants climbing palms, white lilies after the rain, and purple blooms showing off like they pay rent.

Honduras doesn’t do boring gardens.
