Genji Challa is running very low!

This vibrant natural-processed Ethiopian is a favorite among home roasters. With incredible potential for bright, juicy flavors — think blueberry, ripe peach, wildflowers, honey sweetness, and a delicate bergamot finish. It develops beautifully in the roaster, offering excellent clarity and complexity even at light to medium-light roasts.

Perfect for your home setup — whether you’re using a popcorn popper, Aillio Bullet, or Gene Cafe. One of those coffees that rewards careful roasting and brings serious cup quality to your home.

Roasting for Acidity: Level Up Your Light Roasts 🍒🍊🍋🫐🍓

That bright citrus pop, red berry vibrancy, or crisp green apple finish doesn’t come from magic. It comes from mastering the roast curve.

Quick Fire Tips for Roasting High-Acidity Coffees:

Go lighter, but smart. Aim for City to City+ roasts. Once you push past first crack too far, acidity drops fast, and you’ll get more chocolate/nut than fruit.

Fast ramp, gentle finish. Quick dry phase and charge temperature to build momentum, then ease off the heat approaching first crack. This preserves delicate acids without baking the beans.

Drop early & cool aggressively. Listen for the rhythm of the first crack — many great acidity bombs are dropped 30-60 seconds after the start of FC. Get them into a colander or cooling tray fast!

Bean density matters. Those dense Ethiopian & Kenyan naturals? They love a slightly more aggressive approach.

Rest properly. 7–14 days for light roasts.

Pro move: Roast the same bean in 3 different profiles side by side (same batch, different days). Cup them blind. You’ll learn more in one afternoon than in months of guessing.

What does double fermentation mean in Kenya? 🍷🍫☕️

Double fermentation is a controlled extension of the washed process used to modulate microbial activity and refine cup structure.

After depulping, the coffee undergoes a primary fermentation, either dry or submerged, where native microorganisms begin breaking down the mucilage. The coffee is then washed to remove degraded sugars and placed into a second fermentation stage in a refreshed environment.

This second stage is not redundant. By renewing the medium, producers can better regulate microbial populations, extend metabolic activity without pushing into over-fermentation, and promote the development of organic acids and aromatic precursors.

In the cup, this often translates to more structured acidity, higher clarity with increased intensity, and a more complex expression of esters that can present as tropical, floral, or vinous notes.

Double fermentation is not about increasing fermentation, but about controlling it through iteration. Timing, temperature, and water composition ultimately define the result.

Why do we work only with Arabica? ☕️🌱🍒

Coffee isn’t just one type of plant; it actually encompasses over 100 species. However, two main varieties dominate the market: Arabica and Canephora, commonly known as Robusta. The distinctions between these two lie in their genetics, chemical composition, and sensory profiles.

Arabica is a more complex species:
• Tetraploid structure → greater genetic diversity
• Thousands of varieties (Bourbon, Typica, Gesha, SL28…) → each with unique cup profiles
• Strong terroir expression → altitude, soil, and climate directly shape flavor

From a technical standpoint, that means:
• Higher sugar content → better caramelization and more layered sweetness
• Lower caffeine → less bitterness, cleaner cup
• Brighter acidity → more expressive notes (citrus, florals, stone fruit)

Robusta (Canephora), in contrast:
• Diploid → less genetic range
• Higher caffeine and chlorogenic acids → more bitterness
• Flavor profile tends toward earthy, woody, and less complex

Robusta is a resilient species, built for yield and resistance—but not for nuance.

Arabica gives us the range to explore variety, origin, and processing—turning each cup into something intentional.
