One of the rarest and most precious cacao varieties in the world, Criollo makes up only a tiny fraction of global cacao production.
Known as the cacao of the Mayas and the Aztecs, Criollo has been prized for centuries for its exceptional quality.
It is delicate, low-yield, and far more difficult to cultivate than other varieties, which is exactly what makes it ๐จ๐ค ๐จ๐ฅ๐๐๐๐๐ก.
Unlike other cacao types, Criollo is naturally lower in tannins, giving it a smoother profile with less bitterness, less astringency, and more creaminess, sweetness, and aromatic depth.
At our plantation in Bali, we mainly cultivate organic Criollo cacao across around 5โ6 hectares of land, with a new area currently in development. It is a small artisanal production, with two harvests a year, shaped by the natural rhythm of the plant and a strong focus on quality over quantity.
