🇮🇹 IRISH BEEF OSSO BUCO 🇮🇪
A little taste of Italy using a beautiful cut of Irish beef shin 🥩
Osso Buco means “bone with a hole” — referring to the marrow-filled bone running through the centre.
It’s a fantastic slow-cooking cut. The marrow adds incredible richness and flavour, while the collagen in the shin slowly breaks down during cooking, giving you beautifully tender meat and a rich, silky sauce. 🤌
🍅 EASY ITALIAN-STYLE RECIPE
You’ll need:
🥩 4 pieces beef osso buco
🧅 1 onion, diced
🥕 2 carrots, diced
🌿 2 celery sticks, diced
🧄 3 cloves garlic
🍅 2 tbsp tomato purée
🍅 1 tin chopped tomatoes
🥩 500ml beef stock
🍷 A splash of red w**e (optional)
🌿 Fresh basil
🫒 Olive oil
🧂 Salt & black pepper
👨🍳 METHOD
1️⃣ Brown the beef
Season the osso buco well and brown in olive oil for 3–4 minutes on each side. Remove from the pan.
2️⃣ Cook the vegetables
Add the onion, carrot, celery and garlic to the same pan. Cook for around 5 minutes until softened.
3️⃣ Make the sauce
Add the tomato purée, chopped tomatoes, beef stock and a splash of red w**e if using. Bring to a gentle simmer.
4️⃣ Low & slow
Return the beef to the pot, cover and place in the oven at 160°C for 2½–3 hours, until the meat is beautifully tender.
5️⃣ Finish with basil 🌿
Add some fresh basil before serving and season to taste.
🍝 SERVE IT WITH…
Creamy mash, soft polenta or pappardelle pasta — and make sure you spoon that beautiful sauce over the top!
