Coffee cupping ☕️👃 - the technique used by producers, roasters, and buyers to taste and evaluate coffee around the world.

Freshly ground coffee is steeped in hot water for a few minutes, the foam is removed from the top , let it cool for a few minutes so not to burn yourself and for the flavours to be released, and then it’s time to taste. But don’t sip… slurp.

That loud slurp isn’t bad manners - it sprays the coffee across your entire palate, helping you pick up on sweetness, acidity, mouthfeel, and those subtle flavour notes you might otherwise miss 👀

It’s all about quality, consistency, and discovering what makes each coffee unique — from soil and altitude to processing and roast.

Our green beans go into the roaster and as the heat builds they crack. Making a popcorn sound. The sugars caramelise and the acidic notes mellow. We stop roasting at the perfect moment to create our tasty specialty coffee!
