"Makaron Linguine all’arancia z krewetkami
- krewetki argentyńskie (te były lidlowe) oczyścić, pancerzyki na patelnię z masłem klarowanym, później podlalam trochę wodą
- na drugiej patelni, masło z oliwa, na to 2 ząbki czosnku, po jakimś czasie czosnek out/won 😉
- dać krewetki, po minucie na każdą stronę
- podlać srubianco;)
- dać sos ze smażenia pancerzyków
- dać startą skórkę z niewoskowanej pomarańczy (bio) - dałam, bo mialam sycylijskie czerwone pomarańcze, ale można i bez tego
- dać wyciśnięty sok z połowy limonki i połowy cytryny
- dodać pomidorki z zalewy solnej (Pomodorino di Manduria)
- dodać ugotowany makaron
- podlać wodą z gotowania makaronu
- na osobnej patelni podsmażone okruchy pieczonej dwa dni temu bułki (w sumie nie okruchy, a pokrojona drobno) na oliwie z odrobina włoskiej ostrej przyprawy
- natka pietruszki
- doprawić na talerzu pieprzem

Nie mogę powiedzieć, że jest to czysto apulijski przepis ponieważ go nieco zmodyfikowałem, a raczej połączyłem dwa... :D każdym razie oba włoskie :D
ziemniaki i fasolkę ugotować... przygotować sobie w misce mieszankę tymianku, majeranku, bazylii, natki pietruszki, czosnku, oliwy , pieprzu i soli ... wrzucić to wszystko wraz z połówkami pomidorów i wymieszać ... posypać bułką tartą i startym pecorino obficie i jeszcze raz wymieszać... do naczynia żaroodpornego i na 30 minut w 200 C w piekarniku... polecam ;)
kazali też dać rozmaryn, ale polubownie położyłem gałązkę na wierzchu... :D
z oryginalnego przepisu wyeliminowałem jajka i passatę pomidorową dodając zamiast tego połówki pomidorów... zmieniłem też sposób obróbki, bo kazali najpierw kilka minut mieszać to na patelni, a do piekarnika włożyć zaledwie na 5 minut i bez pecorino... wizualnie wyglądało to trochę ciapowato... ;)

Doesn't this pasta just scream EAT ME ?! 🙈😂 Just look at those colors. I’ve always had a thing for multi-colored pastas. This pasta is handmade in Italy and made from: sun dried tomatoe, spinach, beets, and turmeric. This beautiful pasta is available to order from 🙌

So today simple pasta dinner recipe for Creamy chicken with sun dried tomatoe 🤤
💫💫💫💫
• 1 onion
• 3 garlic cloves
• 100 g sun dried tomatoes
• 250 g pasta
• 80 ml white wine
• 500 g chicken breast
• 400 ml vegetable stock
• 2 tbsp olive oil
• 50 ml whipping cream
• Fresh basil and parsley

1.
Cook the pasta in a pan of boiling salted water until al dente. Retaining a little cooking water.

2.
Put a pan on a medium-high heat with 2 tablespoons of olive oil, add chopped onion and garlic.

3.
A couple of minutes later, fry the chicken breast cut into smaller chunks, add wine, sun dried tomatoes, cream vegetable stock - cook for 20 min.

4.
Add cooked pasta and serve topped fresh herbs and grated parmesan.

Today, something that balsamico lovers should know... ;-)
Probably few of you have had the opportunity to visit acetaio – or balsamic vinegar factory... The most important thing in acetaia is the battery or a set of different barrel sizes.
In a nutshell, balsamic vinegar production involves acidification of the concentrated grape must by boiling and subsequent seasoning which may take many years... the largest barrel of the battery is filled in 4/5 with grape must; after a year its content is transferred to a smaller barrel and fills 4/5 of its volume, etc. every year, supplementing what evaporated...
After a minimum of 12 years of such fun, you can cast 1/5 of the smallest barrel and name it Aceto Balsamico Tradizionale di Reggio Emilia DOP or Aceto Balsamico Tradizionale di Modena DOP depending on the place of production...
Yes my Dear Friends... these are the tiny bottles in velvet pouches or wooden ornamented boxes for which you have to pay a fortune... ;-)
I understand that you refer to this product as "balsamico"?
And now we get to the bottom... and I hope that I will confuse you a little and change your convictions :-D
Under Italian law, vinegar is the result of fermentation of unprocessed (raw) agricultural products, and yet balsamico is a fermented boiled (and further processed) must ?! Apologies, but the use of the word “vinegar” for the product whose production I described above is illegal under the Italian law and by way of exception (since the word vinegar is part of an internationally accepted name) is only allowed for products older than 12 years:

Aceto Balsamico Tradizionale di Modena DOP
Soon I will acknowledge you with what we buy under the name of “aceto balsamico”... ;-)

Grilled fillet of salmon served with simple spinach, tomatoes, red pepper, olives and capers salad dressed with olive oil and balsamico 💚 delicious lunch🙂
