This creamy prawn coconut curry with fluffy rice is exactly what we’re craving right now! 🥥🍚🍤

And with prawns from our 3 for €10 range, it’s even better.

What you'll need:
3 packs Keohane Bantry King Prawns
1 tsp paprika or mild chilli powder
Salt & pepper
1 tbsp sesame oil
1 red onion
2 tsp minced ginger + 1 tsp minced garlic
3 tbsp Thai red curry paste
1 tsp brown sugar
1 big tbsp smooth peanut butter
1 can coconut milk (400ml)
Juice of 1 lime
2 handfuls Tenderstem broccoli
2 handfuls sugar snap peas
2 chillies, 1 scallion & fresh coriander to finish

Method
Season prawns with sesame oil, paprika, salt & pepper
Sear in a hot pan until golden, then set aside
Sauté the onion until soft, then add ginger, garlic & curry paste — fry 1–2 mins
Stir in the brown sugar & peanut butter
Pour in coconut milk, squeeze in the lime & simmer until creamy
Add broccoli & sugar snaps, cook until just tender
Return the prawns & toss it all together
Top with chilli, scallion & coriander
Serve over fluffy jasmine rice & dig in! 🍚✨
