If a little recipe in a little cookbook just says Biscuits don’t overlook it, this simple to make recipe containing conflakes and coconut turned out a treat and was a big hit with the boss.

Biscuits
5 oz butter
1 cup(7oz, 200g)sugar
1 cup (4 1/2 oz, 125g) flour
1 cup(3oz, 90g) desiccated coconut
1 cup (1 oz 30g) cornflakes
2 tbsp cocoa

Icing
4 oz icing sugar
1 tbsp cocoa
Drop hot milk

Swiss roll tin, 180c 15mins
Ice while hot

Bread and Butter is an old staple dessert but this is a nice twist on the old favourite.
Our quick version has banana and chocolate chips added and cooked quickly in the microwave

4 slices bread toasted and buttered
450ml milk
85g brown sugar
2 eggs
1 tbsp cornflour (corn starch)
2 small bananas
Chocolate chips
1/2 tsp cinnamon

900w microwave approx 12 mins, rest for 5 mins

4 eggs
6 oz(1 cup) caster sugar
6 oz (2 cups) ground almonds
Zest of a lemon
1/2 tsp ground cinnamon
Icing sugar to dust

Oven 180c 8 inch round tin 30 mins approx

The simplest scones that happen to be lactose free and vegan with just 3 ingredients

400g self raising flour
400g can coconut milk
2 tbsp sugar

Oven 200c fan 15 mins

One of our favourite cracker recipes, really simple ingredients and great flavour

1 tin 400g chopped tomatoes
275g rolled oats (porridge)
Dash olive oil
Season to taste with salt, pepper, chilli flakes, herbs etc
Top with seeds

15 x 12 inch tray oven 180c fan approximately 45 mins

What a beautiful evening to be baling hay. The dust was rising and the smell of the fresh hay…all drawn in and ready to be fed when winter arrives. The tractor is a 1979 John Deere 2130 with a Welger AP65 baler

When you want a cake but don’t want much hassle this works…

3 ingredient Pineapple Cake
450g pineapple and juice
200g /7 oz/ 1 cup sugar
240g/ 8 1/2 oz/ 2 cups SF flour

8 inch square baking tin, oven 170 c fan 40 mins approx
