COCO NOVA Welcome to Coco Nova gourmet chocolate truffles and other delectables. Cocoa originates from South America. Chocolate is associated with many festivities.

Chocolate has been prepared as a drink throughout history, it is thought that the Olmecs were the first to use back in 1500BC. There are three varieties of cocoa tree: Criollo, Forastero and Trinitario. Ripe cocoa pods are harvested, sliced in half and the beans are scooped out. Beans are placed in piles and covered with banana leaves for fermentation between 4 to 6 days. Cocoa beans are then sundried for one to two weeks, resulting in the chocolate flavour. The beans are transported to the chocolate factory where cleaning and light roasting take place. The shell is removed to extract the nib and finally the nibs are grounded. The outcome product is the chocolate liquor which can be further processed into cocoa solids & cocoa butter. Chocolate liquor is blended with various percentages of cocoa butter, vanilla and soya lecithin to form the chocolate. Fresh chocolate has a short shelf life due to the usage of cream, butter & and other fresh ingredients. It must be stored in a cool, dry and dark place away from strong odours for 14 days.
