Palak ka Kaapa is one of Uttarakhand’s simplest yet most comforting mountain meals. 🌿⛰️

Made with fresh spinach, garlic, green chillies, cumin, and a touch of mustard oil or ghee, the spinach is slowly cooked until soft and lightly mashed into a rustic curry. It’s then finished with a fragrant tempering of garlic, whole red chilli, and cumin seeds.

Serve it hot with mandua (finger millet) roti, steamed rice, or chapatis for a wholesome taste of the Himalayas.
