Basking under the warm Konkan sun, freshly harvested raw cashew nuts undergo a crucial natural step — sun drying.

After the cashew apples are handpicked, the raw nuts are carefully separated and spread out on large open surfaces, usually concrete yards or coir mats. Here, they are dried for several days under natural sunlight, allowing the intense tropical heat to reduce their moisture content gradually.

This slow and even drying process preserves the inner kernel, enhances its flavor, and prepares it for the next stage. Workers gently turn the nuts to ensure uniform drying while protecting the quality.
