Italian cuisine is recognized as UNESCO heritage, and at Fulgor Milano we celebrate it every day. To celebrate this recognition of Italian culture, Antonio Lorenzon presents a great classic of Sicilian tradition: Pasta alla Norma.

Ingredients for 4 people:
• 400 g pasta
• 3 medium eggplants
• 200 g cherry tomatoes
• 1 onion
• 3 garlic cloves
• 700–800 ml tomato passata
• Dried oregano, as needed
• 80–100 g smoked ricotta
• 1 bunch fresh basil
• Extra virgin olive oil, as needed
