Petite-Forêtとは

藻岩山麓にあるワインショップです。

ワインの保存には細心の注意を払っております。
丘を削り、その側面にワインセラーを建築し
再度、外壁を土で埋めました。
強い対流が起こるクーラーではなく、
冷たい水の力を使い
放射と自然対流で温度を管理。
風や音、振動もない洞窟のような空間です。
また土に埋まったセラーは自然に高湿度を保ちます。

扱うワインは1本通して飲んだもの。
飲んだことのないワインは極力扱いません。
自然派ワインに関しても
外観、味わい、余韻、
その全てに透明感があるワインしか扱いません。

劣化臭のないワインを扱うのは当たり前であり
最低限のおもてなし。
アセトアルデヒト、酢酸、酢酸エチル、カプリル酸、
メルカプタン、メチオノール、硫化ジメチル、
フェノール化合物、カビ臭、TCAなど
その全ての劣化を判別し、
ソムリエでもある店主がケアいたします。

1月の宮川さん。

この日の1番は
戸井町産・中トロの柵漬けにぎりでした😊

脂はしっかり乗っているのに、
くどさはなく、後味はとてもきれい。
余韻も長く、口の中に残る。

そこへ燗酒をひと口。
その熱で、口内を包んでいた中トロの旨みが
もう一段、はっきりと感じられる。

同じ一貫なのに、
時間と温度で表情が変わり、
あらためて身震い。

とても印象に残る中トロでした。

January at Miyagawa.

The moment that made me shiver the most
was the saké-zuke chutoro from Toi.

The fat was generous,
yet never heavy.
The finish was clean and long,
lingering on the palate.

Then, a sip of warmed sake.
With the heat, the umami of the chutoro—
which had been coating the mouth—
became clearer, more vivid.

The same piece,
yet its expression changed with time and temperature,
bringing another shiver.

A truly memorable piece of tuna.

12月の宮川さん。

イサキの握りが、とても印象に残りました。
旬は晩春から夏と言われる魚ですが、
寒イサキには、また別の魅力があります。

身は締まりがあり、
脂は控えめで、重たさがない。
噛み進めると、味わいが幾層にも変わっていくのです。

この日は、いつもは合わせないけれど、
イサキの余韻にシャンパンを合わせました。

宮川さんの鮨飯の、
赤酢由来のフルーツを思わせる香りと酸、
旨みを帯びた甘さ、ミネラルの余韻。
それが
Pierre Gerbais, Extra-Brut Grains de Celles と重なり、
余韻がとてもきれいに残る。

とても美しく、
身震いするほどの組み合わせでした。

December at Miyagawa.

The isaki nigiri left a strong impression.
Its peak season is often said to be late spring through summer,
but winter isaki has a different kind of charm.

The flesh is firm,
the fat restrained, without any heaviness.
As you continue chewing, the flavors unfold in layers.

On this day, I paired it with Champagne—
something I don’t usually do—
allowing the wine to meet the lingering finish of the isaki.

The sushi rice at Miyagawa carries
fruit-like aromas and acidity from red vinegar,
a gentle sweetness with umami, and a mineral finish.
These elements overlapped beautifully with
Pierre Gerbais, Extra-Brut Grains de Celles,
leaving a remarkably clean and lasting finish.

It was a beautiful pairing,
one that sent a quiet shiver through me.
