In my cooking classes, I enjoy sharing not just the how, but the why behind each technique.
For example:
• Mix sushi vinegar with the rice while the rice is still hot—otherwise, it may get soggy.
• Never let miso soup boil, or the aroma will disappear.
• Most high-quality kombu comes from Hokkaido, because it takes over two years to grow, and the warm sea temperatures in other regions prevent it from surviving the summer.
Students often say, “Wow, I didn’t know that!” or “That’s so interesting!”
It’s such a pleasure to cook and learn together, whether with locals or international guests.
Before COVID, I taught weekly English-language classes at KAI’s studio in Akihabara. That had to pause—but I’ve recently built my own kitchen studio in East Tokyo, and I’m excited to welcome students again!

レッスンでは、作り方だけではなく、なぜの説明にも気をつけています。
たとえば、
寿司酢はご飯が熱いうちに入れないと、ご飯が酢を吸わなくてベタベタになるよ、とか、味噌汁は煮立てると香りが飛んでしまうよ、とか、上等な昆布が北海道産なのは、立派なのは育つのに2年以上かかるけど、他の地域だと海水の温度が高すぎて夏に枯れてしまうからなんですって、などなど。
へー、そうなんだ!面白いね!なんて言ってもらいながらお料理するのは、日本の方とでも、外国の方とでも、とても楽しいものです。
そして、長年何かが足らないんじゃと二の足を踏んでいた自前の英語でのお教室、もう解説できる料理の知識も語学力も、さすがにそれなりに揃って来たかなと、そろそろ自分で認めてやりたい😂
