Today Morocco is the world’s 5th largest producer and exporter of olive oil with over 1 million hectares of olive trees producing 160,000 tons of olive oil and 130,000 tons of table olives in the 2022/23 crop year.
Etymology of the native Berber language suggests that olive trees were known prior to contact with the Phoenicians, who are commonly given credit for introducing olives to this region. Now olives make up 65 percent of the tree species in the country. Many groves in Morocco are as high as 600-800m above sea level. The climate in the country is typically hot and dry, which does strain the trees' output.

The Arabs braught Saffron to the kingdom of Morocco around the 10 century .

Women wake up very early in the morning at dawn and hit the road to the saffron fields .Then, the women farmers start to harvest the crop before it gets so hot . The process of harvest starts at 4 am in the morning and finishes at 9 am, approximately .

The harvesting is done, delicately, with the hand and every 150 Saffron flowers give 1 gram of dry stigma.

In otherwords, 150000 flowers give 1 kilo of Saffron .

After collecting the flowers , women put the Saffron flowers on a table with a white cloth .then , the farmers start to seperate the red stigma from the purple flowers.

After the seperation process is over , the women farmers dry the Saffron extentively to guaranty its quality and make sure it will have no dust .

The largest leather workshops, tanneries, and dye-houses are located in Fez. Tanneries are one of the main city attractions, and many visitors looking for the opportunity to see how Moroccans make leather using medieval technologies.

In one of the courtyards, under the open sky, there are several dozen stone baths, in which leather is dyed by hand for centuries. Once the workers receive different types of animal skin such as cow skin, camel, sheep, and goats, they follow a process of work to make the skin ready to go to the next stage.

The next step is coloring the skin.
All dyes are exclusively natural. Even now, in the 21st century, the tanners of Fez work without synthetics. For example, saffron skin is used to produce yellow. For green, they use mint, for brown they use Jurema preta, and to get red they use paprika. It takes one week to dye sheep’s and goats’ skin. Dyeing cow skin usually takes two weeks. The camel skin does spend a whole month in the dyeing bath. After some time, the dyed leather will be used to create shoes, bags, and various accessories.

Cleaning Tips
It is recommended to clean products made of genuine leather with a sponge plated with colorless shoe cream or wax. You can even use a nourishing face cream. You can apply it for 20-30 minutes, then you need to wipe the items with a soft flannel cloth until no traces of fat remain on the surface. Every spring, at the base of the Atlas Mountains, women get up before dawn to pick countless pink roses by hand. They work quickly to avoid the sun so that the roses stay fresh and fragrant. This place is called The Valley of Roses, and the Persian and Damask roses that the women harvest will be used to make essential oil and rose water.
How to Use Rose Water
Rose water is used in Moroccan beauty regimes as a skin softener, toner, and perfume. In the kitchen, it’s used as a flavoring. It takes ten tons of petals to produce a few liters of this aromatic water.
Rosewater is applied to cotton balls and gently wiped over the face as a gentle makeup remover. With anti-inflammatory properties, it is also known to soothe skin and remove blemishes.
