Puli Inji or Inji Puli is a South Indian state Kerala Style relish or spicy instant pickle that is made with the main ingredients Ginger, Tamarind and Jaggery (cane sugar). It has 3 key elements - sweet, sour and spicy; making it an absolute treat for the taste buds.
It's Sourness is achieved by using Tamarind while Ginger together with dried chillies provide the heat and spice. To balance both the sourness and the spice, Jaggery is added to give the final kick. A traditional Kerala meal is incomplete without this table condiment. But now, it has become a favourite in many homes.
However, let me give you a fair warning...it is quite addictive and you will be surprised how quickly a jar of puli inji gets finished at home!
