How to make pistachio salmon πππ₯
Today I made a juicy oven-baked pistachio salmon with crispy potatoes, creamy avocado and fresh sumac onions ππ¨βπ³
For the salmon, I used 300g salmon and made a topping with coarse mustard, honey, fresh lemon juice and chopped pistachios. I seasoned the salmon with salt, black pepper, red pepper and sumac, then spread the mustard-honey-pistachio mixture over the top π―ππ
The salmon went into the oven at 200Β°C for about 12β15 minutes, just until it was cooked through but still soft and juicy inside πβ¨
For the potatoes, I first boiled them in salted water for 8 minutes. After draining them, I added olive oil, salt, black pepper and red pepper. Then I roasted them in the oven at 200Β°C for around 35 minutes until golden and crispy π₯π₯
I served everything with fresh avocado and homemade marinated onions. The onions were mixed with sumac, salt, black pepper, olive oil and fresh lemon juice π₯π§

At the end, I finished the plate with fresh parsley, a little Parmesan cheese and extra chopped pistachios for more crunch πΏπ§π

The result is a perfect mix of juicy salmon, crunchy pistachios, sweet honey, tangy mustard, crispy potatoes, creamy avocado and fresh lemony onions ππ₯
A lot of different flavors and textures on one plate, but everything works together beautifully β€οΈπ¨βπ³
